Which programs are you trying to delete?
It's optional for a program to add itself to the Add/Remove list. If it does not show in the Add/Remove programs list you sould be able to uninstall using a uninstall option from the directory of the program.

If it's a Windows program you need to click the Add/Remove programs from the control panel, then click Add/remove windows Compnents to go to the list of Windows programs.
